Introducing Shirley, a seasoned Project Manager in the High Tech Industry who has a passion for baking. Hailing from Scotland, she embarked on her culinary journey with Rising Thistle in 2018. It all began when Shirley discovered her severe gluten intolerance and recognized the limited availability of high-quality gluten-free options. Leveraging her expertise in project management and her unwavering commitment to excellence, Shirley set out to fill this gap in the market. The result? A delightful array of uniquely crafted gluten-free baked goods that capture the essence of Scottish flavors and traditions.

The other half of Rising Thistle's dynamic baking duo is Shirley’s husband, Mick. After retiring from his previous career, Mick wholeheartedly embraced his new role as Shirley's right-hand man in the kitchen. With a passion for precision and a knack for kneading dough, Mick serves as the master bread baker at Rising Thistle. Not content to simply stay behind the scenes, Mick also takes on the important task of ensuring that all the freshly baked goods are delivered promptly to delighted customers. Together, Shirley and Mick form a formidable team, dedicated to crafting delicious gluten-free treats and spreading joy, one bite at a time.
